Grant's Guacamole


There are a lot of guacamole recipes out there, but my husband Grant has come up with our "go to" version. It's so fresh and good. If you've never made it from scratch, I encourage you to do so; the difference between this and the prepared versions you find in stores is tremendous! Some recipes call for diced tomatoes - if you like that, throw them in too!

Ingredients

3 ripe Haas avocados

Juice of 1 lime

1/3 cup finely diced red onion

4 cloves garlic, minced

1 Serrano chile, halved, seeded, and minced

¾ cup fresh cilantro, chopped

2 tablespoons extra virgin olive oil

Salt and pepper to taste

Directions

Run your knife lengthwise around each avocado and its pit. Twist the avocado and pull it apart. Carefully tap your knife into the pit, twist, and remove. Scoop the flesh out of each half of and cut it into large chunks (you’ll later mash it a bit into smaller pieces).

Cut the lime in half and squeeze the juice over the avocado chunks and stir. You need to do this step quickly to prevent darkening of your avocado from oxidation and to keep it vibrantly green.

Add the finely diced onion, garlic, and Serrano chile, and stir to combine. Toss in the cilantro and add the olive oil; stir to combine well. Add salt and pepper to taste.

Using a potato masher, mash the guacamole a bit until the avocado is mashed coarsely but still quite chunky.

Serve with tortilla chips. And Margaritas. Or any drink with tequila. Or with absolutely anything, really. Mmmmm.

In the beginning...

Halve and pit your avocados, scoop out the flesh, and cut into large chunks

Add the juice of one lime to your avocado chunks and stir. This will prevent the darkening caused by oxidation.

Add finely diced red onion.

Mexican garlic - it's slightly milder than the all-white skin American version, but use whatever you have. Finely dice 4 cloves and add it to the avocados and onions.

Halve and seed the Serrano chile; finely dice it and add it to the bowl.

Almost done!

Add the chopped fresh cilantro, and...

The olive oil. Stir everything together.

Using a masher, mash the guacamole a bit but still leave it very chunky. Salt and pepper to taste.

Delicious!
